Killer Koji is is a deep-dive into the science of "Swavoury," built around the complex, fermented backbone of White Miso and a hit of Natural Caramel. It’s designed for chefs who want that elusive, umami-rich "fifth taste" without the hours of reduction.
We’ve layered a savoury Chicken Stock base with the aromatics of Ginger and Garlic, finished with Black and White Sesame Seeds for a punked up, textured aesthetic.
It’s a high-definition flavour profile that just works. Use on wings (this blend will help crisp skin), chicken, pork, in broths or on fries… or anywhere that needs a sesame smash or umami boosting koji.
Ingredients: Chicken Stock (Water, Chicken Stock [Flavouring, Glucose Syrup, Salt, Yeast Extract, Sugar]), Garlic, White Miso (Soya bean, Rice, Salt), Caramel Powder, Baking Powder (Maize Starch, Disodium diphosphate [E450i], Sodium bicarbonate [E500i]), Sea Salt, Ginger, White SESAME Seeds, Black Pepper, Black SESAME Seeds, Onion, Parsley, MUSTARD, CELERY.

Use at around 5-10% or to taste. 1 table spoon = about 15g. 3 tablespoons for a (500g) of chicken wings. 1-2 tablespoons for a 227g chicken breast.
Respect the meat. Wings are always crispier when patted dry before rubbing. Chicken is always better brined.
